How I got myself to eat more vegetables
- The very first step and what you might consider the most integral part was to subscribe to a farm share where vegetables arrive at my home and I don't have to think about it at the grocery store.

- Find the easiest and laziest ways to put those vegetables in food that I already eat. For example:
a. microwave Trader Joe's gluten-free mac and cheese
b. cut up some vegetables

c. stir

d. find a fruit in the fridge to serve it with
- Find the easiest and laziest ways to create new meals. For example:
a. steam a bag of grains
b. cut up a fruit
c. cut up some vegetables
d. grab a handful of nuts
e. put them all together in a bowl
f. top with preferred dressings
- Find the easiest ways to prepare the vegetables for various uses. I made a sign for myself that gives temperatures and times for roasting various vegetables that I enjoy. It's on my kitchen wall.
That's it. Those are the steps that I followed and now I'm passing blood tests after getting nutrients that my body needs! Big personal win.
After decades of generally avoiding many vegetables, it has gotten so much easier to eat a variety and keep up with them in my diet. (I have always been a big fan of fruits.)
